Ingredients:

For the dough:

  • 4 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 1/4 tsp active dry yeast
  • 3/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup milk
  • 2 large eggs

For the filling:

  • 8 oz semisweet chocolate, chopped
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 tbsp unsweetened cocoa powder
  • 1 tsp ground cinnamon

For the streusel topping:

  • 1/4 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, softened

Instructions:

  1. In a large bowl, whisk together the flour, sugar, yeast, and salt.
  2. In a small saucepan, heat the butter and milk over low heat until the butter is melted. Remove from heat and let cool until it reaches a temperature of 110-115ยฐF.
  3. Add the cooled milk mixture and eggs to the flour mixture and stir until the dough forms a ball. Knead the dough on a floured surface for about 5 minutes until it is smooth and elastic.
  4. Place the dough in a greased bowl, cover with plastic wrap, and let it rise in a warm place for about 1-2 hours, or until it has doubled in size.
  5. To make the filling, melt the chocolate in a double boiler or in the microwave, stirring every 30 seconds until smooth. In a separate bowl, mix the butter, sugar, cocoa powder, and cinnamon until smooth. Add the melted chocolate and stir until well combined.
  6. Punch down the dough and roll it out into a 16x20 inch rectangle. Spread the chocolate filling evenly over the dough, leaving about a 1-inch border around the edges.
  7. Roll the dough tightly into a log, starting at the long end, and pinch the edges to seal.
  8. Cut the log in half lengthwise and twist the two halves together, making sure the chocolate filling is facing up. Pinch the ends together to seal and place the twisted dough into a greased loaf pan.
  9. To make the streusel topping, mix the flour, sugar, and butter together until crumbly. Sprinkle the streusel over the top of the dough.
  10. Cover the loaf with plastic wrap and let it rise for another 30-60 minutes, until it has risen above the edge of the pan.
  11. Preheat the oven to 350ยฐF. Bake the Chocolate Babka for 45-50 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
  12. Let the Chocolate Babka cool for a few minutes before slicing and serving warm. Enjoy!
