Instructions:
- Prepare the Dough: In a large bowl, combine the flour, sugar, and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Add the ice water a tablespoon at a time, mixing just until the dough comes together. Form the dough into a disk, wrap it in plastic, and refrigerate for at least 30 minutes.
- Make the Apple Filling: While the dough chills, peel, core, and slice your apples. Toss the apple slices with brown sugar, lemon juice, and cinnamon until well coated.
- Assemble the Galette: Preheat your oven to 375°F (190°C). On a lightly floured surface, roll out the dough into a roughly 12-inch circle. Transfer the dough to a parchment-lined baking sheet. Arrange the apple slices in the center of the dough, leaving a 2-inch border. Fold the edges of the dough over the apples, pleating as necessary.
- Bake: Brush the dough with the beaten egg to give it a beautiful golden finish. Bake for 40-45 minutes, or until the crust is golden brown and the apples are tender. Let the galette cool slightly before serving.
