Ingredients:

  • 4 large bell peppers (any color you prefer)
  • 1 pound (450g) ground beef or ground turkey
  • 1 cup cooked rice (white or brown)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes (canned or fresh)
  • 1 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • Olive oil, for cooking

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. If needed, slightly trim the bottoms to help them stand upright. Rinse the peppers and set them aside.
  3. In a large skillet, heat a drizzle of olive oil over medium heat. Add the chopped onion and minced garlic. Sauté for a few minutes until the onion is translucent and fragrant.
  4. Add the ground beef or turkey to the skillet. Cook until browned and fully cooked, breaking it up into smaller pieces as it cooks.
  5. Stir in the diced tomatoes, dried oregano, dried basil, cooked rice, and about half of the shredded cheese. Mix well to combine and let the mixture cook for another 2-3 minutes. Season with salt and pepper to taste.
  6. Fill each bell pepper with the meat and rice mixture, pressing it down gently to pack it in. Top each pepper with the remaining shredded cheese.
  7. Place the stuffed peppers in a baking dish, standing them upright.
  8. Cover the baking dish with aluminum foil and bake in the preheated oven for about 25-30 minutes, or until the peppers are tender.
  9. Remove the foil and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly, and the tops of the peppers are slightly golden.
  10. Carefully remove the stuffed peppers from the oven. Let them cool slightly before serving.
