  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 zucchini, chopped
  • 1 cup chopped green beans
  • 1 can (14 ounces) diced tomatoes
  • 1 can (14 ounces) kidney beans, drained and rinsed
  • 1 can (14 ounces) cannellini beans, drained and rinsed
  • 4 cups vegetable or chicken broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup elbow macaroni or other small pasta
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, chopped, for garnish

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes.
  2. Add the carrots, celery, zucchini, and green beans to the pot and sauté for an additional 5 minutes.
  3. Add the diced tomatoes (with their juices), kidney beans, cannellini beans, broth, basil, oregano, salt, and black pepper to the pot. Bring the soup to a boil, then reduce the heat to low and simmer for 20-30 minutes, or until the vegetables are tender.
  4. Add the pasta to the pot and cook until al dente, according to the package instructions.
  5. Serve hot with a sprinkle of grated Parmesan cheese and chopped parsley for garnish. Enjoy!

Note: This recipe can easily be customized to include your favorite vegetables or protein. You can also adjust the amount of broth or pasta based on your personal preference for a thicker or thinner soup.
