- 2 1/2 cups (300g) all-purpose flour, plus extra for dusting
- 1 teaspoon salt
- 1 cup (2 sticks or 226g) unsalted butter, cold
- 1 cup (240ml) ice-cold water
Instructions:
- Prepare the Butter Block: Cut the cold unsalted butter into small cubes. Place the butter cubes on a sheet of plastic wrap and shape them into a square or rectangle. Wrap the butter tightly in the plastic wrap and refrigerate for about 20-30 minutes until it's firm but not too hard.
- Prepare the Dough: In a mixing bowl, combine the all-purpose flour and salt. Gradually add the ice-cold water, mixing until the dough just comes together. Be careful not to overmix. The dough should be shaggy.
- Roll Out the Dough: On a lightly floured surface, roll out the dough into a rectangle that's about twice the size of your butter block.
- Encase the Butter: Place the chilled butter block on one half of the dough and fold the other half over the butter to encase it completely.
- Fold the Dough: Roll out the dough into a rectangle again and then fold it into thirds like a letter. This is one "turn." Chill the dough for 20-30 minutes in the refrigerator.
- Repeat the Folds: Repeat the rolling and folding process (making a total of 3-4 turns) with chilling in between each turn. This builds the layers in your puff pastry.
- Rest and Use: After your final turn, let the dough rest in the refrigerator for at least 30 minutes before using it in your desired recipe.
