  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 1/4 cup freshly squeezed lemon juice
  • Zest of 1 lemon
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and pepper, to taste
  • Fresh oregano or parsley for garnish
  • Lemon slices for serving

  1. In a bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, dried oregano, dried thyme, dried rosemary, salt, and pepper. This mixture will be your marinade.
  2. Place the chicken breasts in a zip-top plastic bag or a shallow dish and pour the marinade over them. Make sure the chicken is well coated with the marinade. Seal the bag or cover the dish and let the chicken marinate in the refrigerator for at least 1-2 hours. For best results, you can marinate overnight.
  3. Preheat your grill or stovetop grill pan over medium-high heat. You can also use an oven by preheating it to 375°F (190°C).
  4. Remove the chicken from the marinade and let any excess marinade drip off.
  5. If grilling, cook the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F (74°C) and the chicken is no longer pink in the center. If using an oven, place the chicken on a baking sheet and bake for about 20-25 minutes, or until fully cooked.
  6. Once the chicken is cooked, remove it from the heat and let it rest for a few minutes before serving.
  7. Garnish the Greek Lemon Chicken with fresh oregano or parsley and serve with lemon slices on the side.
  8. This dish pairs wonderfully with rice, roasted potatoes, or a fresh Greek salad.

Enjoy the bright and refreshing flavors of your homemade Greek Lemon Chicken!

Note: Cooking times may vary based on the thickness of your chicken breasts and the cooking method used. Always ensure that the chicken is cooked through before serving.
