A Hearty Vegetarian Meal: French Onion Soup without the Beef

French onion soup is a classic, hearty soup that is both comforting and delicious.

Fortunately, it's possible to make a delicious vegetarian version of French onion soup that is just as satisfying as the original.

One of the key ingredients in French onion soup is, of course, onions. In this vegetarian version, we start by caramelizing the onions in butter and olive oil, which gives them a rich, sweet flavor.

We also use vegetable broth instead of beef broth, and add a few extra flavorings to make up for the lack of meat.

Thyme and bay leaves add a herbal note, while a splash of red wine and a bit of soy sauce add depth and umami.

To top the soup, we use a slice of toasted baguette and a generous amount of melted Gruyere cheese. The result is a warm, comforting soup that is perfect for a cold day.

Ingredients:

  • 4 large onions, sliced
  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1/2 cup red wine
  • 6 cups vegetable broth
  • 2 bay leaves
  • 2 sprigs fresh thyme
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • Baguette slices
  • Gruyere cheese, shredded

Instructions:

  1. In a large pot or Dutch oven, melt the butter with the olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, for about 25-30 minutes until the onions are caramelized and browned.
  2. Add the minced garlic and cook for an additional 1-2 minutes.
  3. Sprinkle the flour over the onions and stir to combine. Cook for 1-2 minutes until the flour is lightly browned.
  4. Add the red wine and stir to scrape up any brown bits on the bottom of the pot.
  5. Pour in the vegetable broth, add the bay leaves and thyme, and bring to a simmer. Reduce the heat to low and let the soup simmer for 30 minutes.
  6. Stir in the soy sauce and season with salt and pepper to taste.
  7. Preheat the oven to broil. Arrange the baguette slices on a baking sheet and toast them in the oven for 1-2 minutes until lightly browned.
  8. Ladle the soup into oven-safe bowls and place a slice of toasted baguette on top of each bowl. Sprinkle a generous amount of shredded Gruyere cheese over the baguette slices.
  9. Place the bowls on a baking sheet and broil in the oven for 1-2 minutes until the cheese is melted and bubbly.
  10. Serve hot and enjoy!
