- 1 lb large shrimp, peeled and deveined
- 1/2 red onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 2 garlic cloves, minced
- 2 tbsp olive oil
- 1 tsp chili powder
- 1 tsp ground cumin
- Salt and pepper, to taste
- 4 large flour tortillas
- 2 cups shredded cheese (cheddar, monterey jack, or a combination)
- 1/4 cup chopped fresh cilantro
- Lime wedges, for serving
- In a large skillet over medium-high heat, add 1 tbsp of olive oil. Once hot, add the sliced onion and bell pepper and sauté for 2-3 minutes until they start to soften. Add the minced garlic and sauté for another minute until fragrant. Remove the vegetables from the skillet and set aside.
- In the same skillet, add the remaining 1 tbsp of olive oil. Add the shrimp and sprinkle with chili powder, cumin, salt, and pepper. Cook for 2-3 minutes until pink and slightly charred. Remove from the heat and set aside.
- Place a large skillet over medium heat. Place one tortilla in the skillet and sprinkle a quarter of the shredded cheese over half of the tortilla. Top with a quarter of the cooked shrimp and sautéed vegetables. Sprinkle with cilantro. Fold the other half of the tortilla over the filling and press down gently with a spatula.
- Cook for 2-3 minutes on each side until the tortilla is golden brown and the cheese is melted. Remove from the skillet and repeat with the remaining tortillas and filling.
- Cut the quesadillas into wedges and serve with lime wedges on the side.
