  • 1/2 red onion, thinly sliced

  • 1 tsp ground cumin
  • Salt and pepper, to taste
  • 4 large flour tortillas
  • 2 cups shredded cheese (cheddar, monterey jack, or a combination)
  • 1/4 cup chopped fresh cilantro
  • Lime wedges, for serving

Instructions:

  1. In a large skillet over medium-high heat, add 1 tbsp of olive oil. Once hot, add the sliced onion and bell pepper and sauté for 2-3 minutes until they start to soften. Add the minced garlic and sauté for another minute until fragrant. Remove the vegetables from the skillet and set aside.
  2. In the same skillet, add the remaining 1 tbsp of olive oil. Add the shrimp and sprinkle with chili powder, cumin, salt, and pepper. Cook for 2-3 minutes until pink and slightly charred. Remove from the heat and set aside.
  3. Place a large skillet over medium heat. Place one tortilla in the skillet and sprinkle a quarter of the shredded cheese over half of the tortilla. Top with a quarter of the cooked shrimp and sautéed vegetables. Sprinkle with cilantro. Fold the other half of the tortilla over the filling and press down gently with a spatula.
  4. Cook for 2-3 minutes on each side until the tortilla is golden brown and the cheese is melted. Remove from the skillet and repeat with the remaining tortillas and filling.
  5. Cut the quesadillas into wedges and serve with lime wedges on the side.
