Ingredients:
- 2 cups long-grain rice
- 1 onion, chopped
- 2 red bell peppers, chopped
- 2 Scotch bonnet peppers, chopped (optional)
- 4 ripe tomatoes, chopped
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- 2 teaspoons curry powder
- 1 teaspoon salt
- 2 tablespoons tomato paste
- 3 tablespoons vegetable oil
- 3 cups chicken or vegetable stock
- 1 pound boneless chicken thighs, cut into bite-sized pieces (optional)
- Fresh parsley or cilantro for garnish
Instructions:
- Rinse the rice thoroughly and soak it in water for about 30 minutes.
- Blend the onion, red bell peppers, Scotch bonnet peppers (if using), and tomatoes in a blender or food processor until smooth.
- In a large pot, heat the oil over medium heat. Add the minced garlic and sauté for about 30 seconds.
- Add the blended pepper and tomato mixture to the pot and stir well. Cook for about 5-7 minutes, stirring occasionally.
- Add the dried thyme, smoked paprika, curry powder, salt, and tomato paste to the pot and stir well.
- Add the chicken (if using) and stir well to coat it with the sauce. Cook for about 5-7 minutes, stirring occasionally, until the chicken is no longer pink.
- Drain the soaked rice and add it to the pot, stirring well to coat it with the sauce. Add the chicken or vegetable stock to the pot and stir well.
- Cover the pot and let the rice cook over low heat for about 20-25 minutes or until the liquid is fully absorbed and the rice is tender. Stir occasionally to prevent the rice from sticking to the bottom of the pot.
- Once the rice is fully cooked, fluff it with a fork and garnish with fresh parsley or cilantro.
