This is a fun take on a Korean version of spinach, with the spinach wilted in sesame oil and sprinkled with toasted sesame seeds.

We found the recipe in "The World's Best Recipes" by Mark Bittman. In typical Bittman fashion, spinach is quick, easy, and good.
This recipe is a simplified version of sigeumchi namul, a Korean spinach banchan or side dish.
This one doesn't have chives, while the other one does, and the seasonings are a bit different.

Can you only use fresh spinach?
We didn't make this recipe with frozen spinach, but one of our readers used frozen chopped spinach and was pleased with the results.

If you are using baby bagged spinach, there is no need to pre-soak it as this spinach is very clean. Also, baby spinach does not need to be chopped.
Spinach that you buy in bunches at the farmer's market may have a lot of dirt on the root that needs to be washed off before using the spinach.
Ingredients
- 1 tablespoon toasted sesame
- 3 tablespoons toasted (dark) sesame oil, divided
- 1 tablespoon minced garlic
- 1 pound fresh spinach (if using mature spinach, soak in water to clean, drain, squeeze out excess water, remove and discard large stems, coarsely chop leaves)
- 1 spoon of sugar
- 1 tablespoon soy sauce (use gluten-free soy sauce for the gluten-free version)
- Salt to taste
Method
Toast the sesame seeds:
If you haven't toasted the sesame seeds yet, do so first. Heat a skillet without a toothpick over medium-high heat.
Add raw sesame seeds and use a spatula or wooden spoon to stir.
The seeds can make a noise and pop, almost like popcorn.
They will brown very quickly, so stir constantly until they start to brown and smell like they are toasted.
Remove from pan to a separate bowl once done.
Saute garlic and spinach in sesame oil:
Heat 2 tablespoons of sesame oil in a large skillet over medium heat. Once the oil is hot, add the garlic.
As soon as the garlic begins to sizzle, add the spinach and cook, stirring occasionally, until the spinach is completely wilted. Lower the heat.
Add sugar and soy sauce:
Add the sugar and soy sauce. Get out of the fire. Add salt to taste.
Serve hot, warm, at room temperature, or cold, drizzled with the remaining sesame oil and sprinkled with sesame seeds.
