  • 1 large eggplant, cut into 1-inch cubes
  • 2 medium zucchini, cut into 1-inch cubes
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 1 (14.5-ounce) can diced tomatoes, drained
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and freshly ground black pepper
  • 1/4 cup chopped fresh parsley leaves
  • 2 tablespoons chopped fresh basil leaves
  • Olive oil, for cooking


  1. Preheat the oven to 375 degrees F.
  2. In a large bowl, combine the eggplant, zucchini, bell peppers, onion, garlic, tomato paste, diced tomatoes, thyme, basil, salt, and pepper. Toss to coat the vegetables evenly.
  3. Transfer the vegetable mixture to a large baking dish. Drizzle with olive oil.
  4. Cover the dish with foil and bake for 45 minutes.
  5. Remove the foil and continue baking for another 15 minutes, or until the vegetables are tender and lightly browned.
  6. Garnish with parsley and basil before serving.
