Instructions
Preparing the Chicken
- Preheat your oven to 375°F (190°C).
- Season the chicken generously with salt and pepper.
- Heat the olive oil in a large ovenproof skillet over medium-high heat. Place the chicken in the skillet, breast-side down, and cook until the skin is golden and crispy. Flip the chicken and brown the other side.
- Add the chopped vegetables (onion, carrots, celery) and garlic to the skillet around the chicken. Toss in the bay leaves and thyme sprigs.
- Pour the chicken stock into the skillet, making sure the vegetables are submerged. This will create the base for our intense chicken broth.
- Transfer the skillet to the preheated oven and roast for about 1 hour, or until the chicken is cooked through and the juices run clear.
Making the Gravy
- Once the chicken is done, remove it from the skillet and let it rest.
- Strain the vegetables from the skillet, reserving the broth.
- In a saucepan, melt the butter over medium heat. Stir in the flour and cook for about 2 minutes to form a roux.
- Gradually whisk in the reserved chicken broth, stirring continuously until the gravy thickens. Season with salt and pepper to taste.
Preparing the Mashed Potatoes
