- 1 cup brown sugar
- 1/2 cup unsalted butter
- 1/2 teaspoon salt
- 1/2 teaspoon apple cider vinegar
- 1/2 cup heavy cream, divided
- 1/2 teaspoon vanilla extract
- 4 (12-ounce) bottles cream soda
For the whipped cream topping:
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon butterscotch extract (optional)
- In a medium saucepan, combine the brown sugar, unsalted butter, salt, and apple cider vinegar. Cook over medium heat until the butter is melted and the mixture is smooth.
- Add 1/4 cup of the heavy cream and the vanilla extract to the saucepan and stir until combined. Remove the pan from the heat and let the mixture cool to room temperature.
- In a large mixing bowl, beat the remaining 1/4 cup of heavy cream until stiff peaks form. Gently fold in the cooled brown sugar mixture until combined.
- To make the whipped cream topping, in a separate mixing bowl, beat the heavy cream, powdered sugar, vanilla extract, and butterscotch extract (if using) until stiff peaks form.
- To assemble the Butterbeer, pour 1/4 cup of the brown sugar mixture into the bottom of each glass. Add 1/4 cup of cream soda to each glass and stir to combine.
- Fill each glass with the remaining cream soda, leaving about 1/2 inch of space at the top. Spoon the whipped cream topping onto each glass and serve immediately.
