For the dough:

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 2 tablespoons vegetable oil
  • Water, as needed

For frying:

  • Vegetable oil for deep frying

Instructions:

  1. In a pan, heat 2 tablespoons of oil over medium heat. Add cumin seeds and let them splutter. Then add chopped onions and green chilies. Sauté until the onions turn golden brown.
  2. Add ginger paste and garlic paste to the pan. Sauté for a minute until fragrant.
  3. Add turmeric powder, garam masala, and red chili powder (if using). Mix well and cook for another minute.
  4. Add the mashed potatoes to the pan. Season with salt and mix everything together, ensuring the spices are evenly distributed. Cook for 2-3 minutes, stirring occasionally. Remove from heat and let the filling cool down.
  5. In a large mixing bowl, combine the all-purpose flour and salt. Gradually add oil and mix until the mixture resembles breadcrumbs. Add water, a little at a time, and knead the dough until it becomes smooth and pliable. Cover the dough with a damp cloth and let it rest for 20-30 minutes.
  6. Divide the dough into small lemon-sized balls. Roll each ball into a thin rectangular shape.
  7. Cut the rolled-out dough into thin strips, about 1/2 inch wide.
  8. Take one strip of dough and gently twist it around a bamboo skewer or thin stick, spiraling it along the length. Remove the skewer, leaving behind the twisted dough strip. Repeat this process with the remaining strips.
  9. Take a twisted dough strip and wrap it around itself, creating a spiral cone shape. Press the end of the strip gently to seal it. Repeat this step with all the twisted dough strips.
  10. Fill each cone-shaped dough with a spoonful of the potato filling. Press the open end of the cone gently to seal it.
  11. Heat vegetable oil in a deep pan or fryer over medium heat. Carefully place the twisted samosas into the hot oil, a few at a time. Fry until they turn golden brown and crispy.
  12. Remove the samosas from the oil and drain them on a paper towel to remove excess oil.
