Ingredients:
- 2 cups sushi rice
- 2 1/2 cups water
- 2 tablespoons rice vinegar

- 1 teaspoon salt
- 8 ounces sashimi-grade fish (such as salmon, tuna, or yellowtail)
- 1 avocado, sliced
- 1 cucumber, sliced
- 4 radishes, sliced
- 4 tablespoons pickled ginger
- 4 tablespoons soy sauce
- 1 tablespoon wasabi paste (optional)
- 2 tablespoons toasted sesame seeds
Instructions:
- Rinse the sushi rice several times until the water runs clear. Then, add the rice and water to a medium saucepan and bring to a boil over high heat.
- Reduce the heat to low and cover the saucepan. Simmer for 15-20 minutes or until the water is fully absorbed.
- Once the rice is cooked, remove from heat and let it sit, covered, for an additional 10 minutes.
- In a small bowl, mix together the rice vinegar, sugar, and salt until the sugar and salt are dissolved.
- Transfer the cooked rice to a large mixing bowl and pour the vinegar mixture over the rice. Use a wooden spoon or spatula to gently mix the rice until it is evenly coated.
- Divide the seasoned sushi rice among four serving bowls. Top each bowl with an equal amount of sliced fish, avocado, cucumber, and radish.
- Garnish each bowl with a tablespoon of pickled ginger and a sprinkle of toasted sesame seeds.
- Serve the Chirashi with soy sauce and wasabi paste on the side, if desired.
