Ingredients:
- 4 cups of water or chicken broth
- 2 stalks of lemongrass, bruised and chopped into 2 inch pieces
- 6-8 kaffir lime leaves, torn
- 3-4 slices of galangal root
- 2-3 Thai bird's eye chilies, chopped
- 3 cloves of garlic, minced
- 1 small onion, chopped
- 1 lb of shrimp, peeled and deveined
- 1/4 cup of fish sauce
- 1/4 cup of lime juice
- 1 tbsp of sugar
- 1 cup of mushrooms, sliced
- 2 tomatoes, chopped
- 1/2 cup of cilantro leaves
- Salt to taste
Instructions:
- In a pot, bring the water or chicken broth to a boil.
- Add the lemongrass, kaffir lime leaves, galangal root, chilies, garlic, and onion to the pot.
- Simmer for 10 minutes to infuse the broth with the flavors.
- Add the shrimp and cook until pink and cooked through, about 2-3 minutes.
- Add the fish sauce, lime juice, and sugar to the pot and stir.
- Add the mushrooms and tomatoes to the pot and cook for an additional 2-3 minutes, until the vegetables are tender.
- Remove the pot from the heat and add the cilantro leaves.
- Taste and add salt if needed.
