  • 1 cup green beans, trimmed
  • 8-10 cherry tomatoes, halved
  • Salt and pepper, to taste
  • Lemon wedges, for serving

You can add half a cup of shrimp, squid, prawns and any other seafood of your choice

Directions:

  1. In a medium saucepan, bring the chicken or fish stock to a simmer and add the saffron. Keep the stock warm over low heat.
  2. In a large paellera or wide, shallow pan, heat the olive oil over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Add the paprika and cook for an additional minute, until fragrant.
  4. Add the chicken and rabbit, and cook until browned, about 5-7 minutes.
  5. Add the snails and cook for an additional 2-3 minutes.
  6. Add the green beans, tomatoes and the rice, stirring to combine.
  7. Pour the warm stock into the pan and bring to a simmer.
  8. Reduce the heat to low and cook, covered, for 20-25 minutes, or until the rice is cooked through and the liquid has been absorbed.
  9. Remove the pan from the heat and let the paella sit, covered, for 5-10 minutes before serving.
  10. Serve with lemon wedges on the side.

Note: This recipe is for traditional paella, but you can add or substitute other ingredients such as shrimp, mussels, squid or peppers according to your preference.
