Ingredients:
For the Chicken Meatballs:
- 1 pound (450g) ground chicken (you can use a mix of white and dark meat for more flavor)
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, finely chopped
- 1 egg, beaten
- 1/2 teaspoon salt (adjust to taste)
- 1/4 teaspoon black pepper (adjust to taste)
- 1/4 teaspoon dried oregano (optional)
- 1/4 teaspoon dried basil (optional)
- Olive oil for cooking
For the Sauce (Optional):
- 1 can (14 ounces) crushed tomatoes or tomato sauce
- 1 clove garlic, minced
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
Instructions:
1. Prepare the Chicken Meatballs:
- In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, chopped onion, minced garlic, fresh parsley, beaten egg, salt, pepper, and optional dried oregano and basil. Mix everything together until well combined.
- Shape the mixture into meatballs, about 1 to 1.5 inches in diameter. You can wet your hands with water to prevent the mixture from sticking.
2. Cook the Chicken Meatballs:
- Heat a few tablespoons of olive oil in a large skillet over medium heat.
- Carefully add the meatballs to the skillet, making sure not to overcrowd them. You may need to cook them in batches.
- Cook the meatballs for about 4-5 minutes on each side, or until they are browned on the outside and cooked through. Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C).
- Remove the cooked meatballs from the skillet and place them on a plate lined with paper towels to absorb any excess oil.
3. Make the Sauce (Optional):
- In the same skillet, add a little more olive oil if needed. Add minced garlic and sauté for about 30 seconds, or until fragrant.
- Pour in the crushed tomatoes or tomato sauce and add dried oregano, salt, and pepper. Stir to combine.
- Let the sauce simmer for about 5-10 minutes, allowing the flavors to meld together.
4. Serve the Chicken Meatballs:
- Place the cooked chicken meatballs in the sauce (if using) and simmer for an additional 5-10 minutes to heat through.
- Serve the chicken meatballs hot, garnished with fresh parsley and grated Parmesan cheese. They are delicious on their own or can be served over pasta, in sandwiches, or as appetizers with toothpicks.
Enjoy your homemade Chicken Meatballs! They are versatile and can be used in a variety of dishes, making them a great addition to your meal prep or weeknight dinner rotation.
