Ingredients:
- 4 corn tortillas
- 4 large eggs
- 1 tablespoon vegetable oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 jalapeno pepper, seeded and finely chopped
- 1 can (14 ounces) diced tomatoes, drained
- 1/2 cup tomato sauce
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- Optional toppings: refried beans, grated cheese (such as queso fresco or cheddar), sour cream, avocado slices, cilantro, salsa
Instructions:
- Heat the vegetable oil in a large skillet over medium heat. Add the corn tortillas one at a time and fry until crispy on both sides, about 1-2 minutes per side. Transfer the tortillas to a paper towel-lined plate to drain any excess oil.
- In the same skillet, add a bit more oil if needed, then add the chopped onion, minced garlic, and jalapeno pepper. Cook until the vegetables are softened, about 3-4 minutes.
