  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 1 teaspoon red chili powder (adjust to taste)
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala powder
  • Salt to taste
  • Fresh coriander leaves, chopped, for garnish

Instructions:

  1. Marinate the Meat: In a mixing bowl, combine the yogurt, ginger-garlic paste, turmeric powder, and salt. Add the meat pieces and marinate for at least 30 minutes, or longer if possible.
  2. Prepare the Achari Spice Mix: In a dry skillet, lightly roast the mustard seeds, cumin seeds, fennel seeds, fenugreek seeds, nigella seeds, and green chilies until they become fragrant. Remove from heat and let them cool. Grind the roasted spices into a coarse powder using a mortar and pestle or a spice grinder.
  3. Cook the Meat: Heat oil in a large pan or skillet. Add the marinated meat and cook until it starts to brown. Remove the meat from the pan and set it aside.
